Understand the ever-changing landscape of hospitality and tourism globally and the need to be aware of issues involved with managing cultural diversity within a global distributed organisation in the hospitality and tourism sector. You examine the impact of the sector within a global perspective and respond to the ever-changing sociocultural and economic factors needed when planning and managing within the hospitality and tourism industries.
The Work Environment and Self-Analysis
The range of employment opportunities in any industry are diverse, from specialist operatives to strategic managers. Research and explore your industry of interest and formulate a career action plan, detailing your strengths and weaknesses to bridge any skills and knowledge gaps.

Sales and Marketing in Tourism
Understand the significance of marketing in the contemporary travel and tourism environment. Global, national and regional travel and tourism organisations in the sector have built successful strategies around a strong retail presence combined with alternative communication channels to support the wider marketing mix. Learn how these companies work to develop high-quality campaigns and a strong presence online as well as the high street.
UK Tourism, Diversity and Importance
Gain an overview of UK tourism enabling you to identify the historical aspects that have led to the current position of the UK tourism market and identify the key technological changes that have shaped, and will shape, its future. Particular attention is focused on the cultural effects that tourism has on the UK, and the cultural significance of the UK for tourism. You also explore the negative impacts of tourism in the UK and the potential future trends and issues.

Food and Beverage Operations
Develop your knowledge, understanding and skills to enable you to work within the food and beverage trade. Underpin your subject knowledge in menu engineering, principles of customer experience and the regulatory constraints surrounding healthy options in line with government initiatives.
On-licensed Trade Management
Develop your knowledge, understanding and skills to enable you to work within the on-licensed trade. Underpin your subject knowledge in law, marketing principles and the regulatory constraints of the on-licensed trade.
Year 2 core modules
Advanced Culinary Skills and Innovations
Develop your knowledge, understanding and culinary skills, enabling you to consider innovations to further your development in a career within the industry. Through the development of theoretical and practical skills, gain an understanding and appreciation of what is required to operate as a practitioner and a manager in this specialised sector.
Enterprise and Entrepreneurial Skills
Develop your entrepreneurial skills and understand how to progress a business as well as identify strategies that sustain and develop enterprises. You develop theoretical knowledge and intellectual development in relation to hospitality and tourism management. You leave with the ability to evaluate and analyse your extended knowledge.
Gastronomy, International Cuisine and Wine
Develop your knowledge and understanding of gastronomy, international cuisine and wine, and your role in supporting the management of a culinary operation. This enables you to underpin your subject knowledge of these areas through an investigation into historical and current perspectives of gastronomy, cuisine from a variety of countries and cultures, wine production and pairing, and exploration of food and wines from various regional and international cuisines together with sensory evaluation of wines and foods.
Industry-related Project
Apply your wider learning in a working environment. Take part in a project with an organisation of your choice to improve an aspect of its operations. This provides a solid platform to showcase your skills, enhancing employability, and supporting you to understand the application of research methodologies and analysis of results.
Managing Events
You understand particular client needs, and effective customer service and management techniques. You learn to assess both the organisational and operational aspects of putting an event together as well as the impact on the locality of the event.
Year 2 core modules (Tourism only)
Current Issues in Travel and Tourism
You identify uses and applications of information technology for E-Business and technology within the tourism sector, and consider the trends and developments in technologies and the implications this has for business operations. From the analysis existing organisations you develop an e-business and technological development strategy for an existing or hypothetical organisation, and present your research and development findings.

You identify uses and applications of information technology for E-Business and technology within the tourism sector, and consider the trends and developments in technologies and the implications this has for business operations. From the analysis existing organisations you develop an e-business and technological development strategy for an existing or hypothetical organisation, and present your research and development findings.

How you learn
You work in small groups with personal tutors to assist you in all elements of learning throughout the two-year course. You are taught by industry professionals and highly skilled and experienced lecturers with a mixture of lectures, seminars, workshops and practical learning to ensure you gain the practical experience needed to work in industry. You have the opportunity to complete work experience in the hospitality and tourism sector to increase your experience.
How you are assessed
A variety of assessment methods are used to enhance your experience and ensure you develop key transferable skills. Formative feedback is given throughout the course.
You are assessed through coursework designed to demonstrate your ability to meet the learning outcomes of the course. Assessments will include, presentations, posters, assignments, portfolios, practical assessments and exams.
